-Under no circumstances can you ever lose skills (except for a few temporary ones you pick up in a couple of missions).
-Have you officially taken Warrior as your secondary profession or have you just obtained some skills? If you haven't confirmed anything yet, don't worry. There are a few quests so you can see what secondary you would be interested in playing which allow you to use some skills from other professions. If you look in the party window, you'll be listed as (I'll pretend you're level 8) either 'E8 <character name>' or 'E/W8 <character name>'. If it's the first one, it's fine. You haven't confirmed anything yet and you can decide what secondary profession you want later. If it's the second one, then it's too late and you'll either have to restart or get a fair way through the storyline to change it again.

The thing is, there wouldn't really be a point to removing skills. There is no limit on the amount of skills a character can know (and therefore have the option to pick from when making a build), except for the amount of skills actually in the game. When you learn a new skill, even if you might not want it at the time, you never know if you might want to use it later on in the game, so if there was an option to remove learnt skills, you might just end up wasting your money later on.

If I understand you question right, you have just started the game and where given a quest to obtain a secondairy profession. Though you can remove the skills from your skillbar (press k, and drag them out or replace them), you might be stuck with this primairy profession. That would mean that you can't use skills from a different secondary profession (though further in game that will be different, early on in nightfall or factions or late in the campaign in prophecy's).
But please check your name in the party window. if it says something like e/w -your name here-, this can't be reversed, if it is only saying something like e -your name here-, you have a quest active and you can abandon it and pick up a different secondairy profession.
If it can't be reverted and you only have prophecy's, you better restart your character and be more carefull nex time. If you also have factions (you don't need to be started there) it's no big deal and you can change it as follow:
a: you started in factions: play through the main questline till you re on the mainland. After you have done the second mission on the mainland you can change your proffession
b: you started in nightfall: play through till you have the outpost consolate docks unlocked. Do the consolate docks mission and the follow up quest hunted. after the quest building the base you get after hunted you can change your proffession.
c: You stated in Prophecy's: play through the game till you re in a town called Lion's Arch. now take the quest that brings you to Cantha (factions). Follow the factions main quest line till you did the second mission. You end up in an outpost where you can change your secondairy profession.

First, relax.
There is no way to mess up your character other than delelting it.
Any skill you learn is yours forever and will not prevent acquisition of other skills.
If you choose secondary profession, you can change it later with relative ease.

Firstly take all quests offered, they get you xp, cash and sometimes skills, who knows further into the game you might just want to use that skill.
There is no limit on how many skills you can learn so by learning them your not limiting yourself.
In the start areas its always a good thing to try out all secondary classes even if your convinced they will not appeal it all helps you level up.
Skills you gain on a character are unlocked across your whole account so may well prove useful when you begin another character of want to equip a hero.

While this surely is the fastest way for a Proph character to change its secondary profession my advice to each and every novice player is not to do it. Simply play the game and change your secondary in the desert like it was meant for Proph characters to change it. This way the Proph storyline will not be savagely interrupted by that Factions atrocity of a storyline.
Not to mention the fact that Proph chars in LA are around level 12 while mobs in Kaineng are designed for level 20 characters.

You didnt say what campaign you are playing and what your primary profession is...
The skills you got are probably just for 1 quest... finish the quest to get extra xp, money, etc. And when done take reward and then another profession-quest, which probably gives you different skills. If you already took all profession quests (i have the feeling you are playing Factions) then you probably just have to talk to one other profession-npc again to change the 2nd prof skills (for some quests they make sense). Just do all 2nd prof quests... its good for your XP and money.
The whole idea behind this quest-system is to give you an idea about the other professions, which makes it easier to choose a 2nd profession when you need to (and even that can be changed later in the game, as stated by other people).
